Why Sourdough Is Different
Our signature sourdough is the base of our doughnuts, and it’s one of the things we’re most proud of. We perfected the world’s first yeast-raised sourdough base in 2014. In 2017, we created a vegan version of the dough, which is just as stunning as the original. Our dough speaks for itself – and although it leaves many people speechless, it also leaves some with a lot of questions. What is different about sourdough? What are the reasons why we use it?
What is different about sourdough bread?
Sourdough bread is made using a different process than regular bread. Regular bread rises because the baker’s yeast reacts with the gluten. Sourdough rises because of a special combination of yeast and bacteria that grows inside a flour-and-water paste. This is called the “starter.” The different process means that sourdough bread takes longer to ferment and rise than other types of bread.

Yes, sourdough does contain yeast.
Why sourdough doughnuts are different
Yes, sourdough doughnuts are made differently than other doughnut types. But the main difference that our customers see is that using sourdough gives our desserts a stronger crumb and bread-like texture. It also means that the doughnuts absorb less oil than their non-sourdough counterparts.
Why we use sourdough
We use sourdough because we prefer that it is lighter and absorbs less fat. It’s also less sweet than traditional doughnut dough, which allows us to have more fun with our flavour offerings. We haven’t yet found a flavour combination that doesn’t work well with our sourdough dough – and we don’t think that day will ever come!
