We’ve slowly simmered Guernsey milk from The Estate Dairy for 36 hours until the sugars deeply caramelise and it turns the consistency of caramel. Known as dulce de leche, and originating from Latin America, this labour of love is then churned through rich British cream to give a wonderfully luscious ice cream with real depth of flavour.
