Job Role: Executive Pastry Chef
Reporting to: Director
Remuneration: up to £50k p/a inclusive of annual bonus
Hours: Variable 40 to 50 hours per week

Job Description:
The Executive Pastry Chef role is the key leadership function in the Crosstown bakery and is responsible for ensuring operational success and maintaining high-quality standards. This will be achieved through a number of essential areas:

People Management:
– You will coordinate the hiring of new bakery staff members in the two main departments of the bakery: Pastry and Dough production. This will be done in conjunction with the department heads and will be led by clear role allocation of an organisational chart which aims to ensure stability and structure
– You will work carefully on bakery staff training, development, and progression to ensure succession plans are in place for both departments. There should be no ‘skill vacuums’ which allow for operational stumbles when people are on holiday or turnover
– The creation of bakery staff training programs will need to be undertaken to reflect a hands-on but structured approach to training of new staff as well as those moving to other positions in the company. This will be implemented in conjunction with the department heads as well as the food technology team
– Using our rostering and HR platform, Rota Ready, you will ensure accurate scheduling of your team each day as well as keeping good HR records of your team. This includes time sheet and holiday approval, as well as scheduling reviews and retaining review documents.
– In conjunction with the company’s HR function, you will be responsible for carrying out reviews and any necessary disciplinary procedures.

Product Quality & Safety:
– Crosstown prides itself on best-in-class quality of its products. You will be focussed on maintaining the consistency of this quality and upholding the company’s high standards
– Working with the full time food technology department, you must uphold high standards of cleanliness and safety. This includes regular maintenance checks of the equipment, ensuring all procedures are carried out meticulously and recorded correctly, and that procedures adapt to reflect best practice
– We are SALSA Accredited and our commitment and obligations to this program underpin our whole bakery operation

New Product Development & Innovation:
– Working with the Head Bakery and Head Pastry Chef, you will develop new doughnut and cookie products
– You will be focussed on progressive and innovative flavours which are seasonal and present a well-rounded offer to our customers which are commercially successful
– Working with the Director of Operations and Head of Marketing, you will adhere to a diverse marketing calendar which centres on ‘special day’ launches, such as Valentine’s Day, Independence Day, and Christmas. This process is project managed and there are strict deadlines we must meet in order to deliver these projects successfully
– You will be responsible for assisting Crosstown prepare for our national growth. This not only includes growing the team, but finding efficiencies in the form of new equipment or processes in the bakery which reduce the reliance on individual team members and the physical stress on staff

Qualifications & Experience:
– Skilled & experienced Baker/Pastry Chef with a successful track record of running artisan production bakeries
– Experience in managing teams of bakery staff and a stable track record of developing staff members
– A team player who works to deliver their departments contribution for the greater company goals
– A good leader who can bring the team leaders with them and command the respect of all staff by leading by example and being an example of best practice
– A track record of working in a role which balances bakery administration with practical output
– Cost control experience / Production planning
– Menu Planning
– IT skills / Bakery and Production Management Software Experience
